Cucumber-tomato salad

We have been working on this one for over a week and I think last night we found the perfect blend.

I should start out by saying Matt HATES tomatoes.  He will eat anything else you put in front of him, but not tomatoes, it's his sole vice.  I have about...45 things I simply won't eat, but tomatoes are not on that list...unless they are stewed (ew). 

Enter Taziki's!  We started eating there and they have a cucumber tomato salad that is SO yummy, we sit around and talk about it between visits.  Matt too.  He loved it!  How to get that at home, because Taziki's is not close or cheap.  We started working on it.  Here is what we came up with:

tomato 1-2 per person  I like Roma, less messy
cucumber 1/2 per person
purple onion 2-3 thin slices per person (from baseball sized onion)
feta cheese tablespoon or two per person
apple cider vinegar
salt
olive oil
cilantro (optional)
Lemon juice (optional)



Chop the tomatoes, you need a sharp knife to get them chopped up without making seeds go all over.
Add to cucumber and onions and toss through with a little olive oil and vinegar.  Add a little salt and pepper if you'd like.  I added cilantro today.  I am making Mexican for dinner!


The last step once it's all coated is to add a little feta cheese.  This is optional, but adds a good flavor to the mix and a little fat.  Your body (and brain!) absorbs nutrients better with good fat in the mix-olive oil counts, so get the best you can afford.


Yummers!  Pop that bowl in the fridge until dinner, 4 hours is plenty, over night is not too long.  I usually make it around lunch, I just got an early start today.  Tomatoes and cucumbers grow in prolific amounts in small areas, you could VERY easily grow both all spring, summer and fall and have cucumber tomato salad cheap and organic every day!

The vinegar and oil make the dressing, eat as-is with anything!  It's goes well with nearly any meal or as a meal in itself if you want it for lunch with half an avocado, a couple slices of deli turkey or some nuts to add protein. The fresh veggies and the vinegar make it very healthy!
