Hummus

This is perfect for summer, parties, snacking and light lunch.


2 cans of chickpeas (garbanzo beans)
1 jar of minced garlic (or a couple cloves fresh)
a dash of lemon juice or olive oil
a dash of salt and pepper

Drain one can of chickpeas and toss into a blender
Pour out a little water from the other can and dump the rest into the blender
Add a dash of lemon juice or oil
Dump in entire jar of garlic
Blend until smooth
Add salt and pepper to taste.

Eat with tortilla chips, cucumber/squash/zucchini slices, crackers or on sandwiches.

Tastes better the second day, make ahead and pop in the fridge.

Pine nuts are really good on top.
